Chicken thai with mango: an exquisite oriental dish

As I have said on several occasions, I love Oriental cuisine and Thai cuisine, in particular, is one of my favorites. So today I decided to share with you all my healthy version of the famous chicken with mango found in so many Thai restaurants. It is a simple recipe to prepare, very tasty and with a very original flavor. I wait for your opinions 🙂

Ingredients

  • 1 cup cooked wild red rice
  • 120 gr. Chicken breast
  • 1 leek (white and light green part)
  • 1/4 onion
  • 1 red pepper
  • ½ cup chopped mango
  • ½ cup chicken broth or vegetables
  • 1 clove garlic
  • Ginger (to taste)
  • 1 tablespoon of tamari sauce
  • Salt

Instructions

  1. Cook the rice according to the instructions of the package
  2. Finely chop the onion, garlic and ginger and place in a nonstick skillet with broth, cook over low heat
  3. Meanwhile cut the leek into slices and the pepper into strips
  4. Put the vegetables in the frying pan about 10 minutes
  5. Chop the chicken and add it to the vegetables with the tamari sauce; Cook 10 minutes more on medium heat
  6. Meanwhile, beat the mango until it is puree
  7. When the vegetables and chicken are already cooked, add the mango puree and put out the fire
  8. Adjust salt and mix well; Let stand a few minutes and serve with the wild red rice

This recipe is compatible with the Fast Metabolism Diet – FMD Phase 1; With these quantities, you get 1 lunch for <20 pounds, for a complete lunch add veggies and ½ cup of phase fruit.
