Whether you are organizing a barbecue with your friends, you are planning the party menu, or you are looking for some healthy and delicious idea, these lemon shrimp skewers are ideal for you. This dish is not only delicious, but they are an ideal dish for any occasion. It is also easily prepared and with few ingredients.

Customize your skewers

The best thing about this recipe is that you can customize it by changing the herbs and adding a touch of extra flavor. I propose some delicious and original combinations that you can try:

  • lemon, black pepper, and turmeric
  • lemon, garlic, black pepper, and oregano
  • lime, coriander, and chili flakes

Lemon shrimp skewers

Phase 3 Serves: 2 Prep Time: Cooking Time:

Ingredients

  • 340 g of peeled shrimps, leaving only the tail
  • 3 or 4 fresh lemons
  • 3 garlic cloves
  • 3 tablespoons of extra virgin olive oil
  • Fresh herbs of your choice
  • Black pepper
  • Sea salt

Instructions

  1. Fill a large bowl with water, and put your wooden sticks inside, so that they soak for a half-hour and do not burn during cooking.
  2. Meanwhile, wash the shrimps well and peel them, leaving the tails on them. You can also ask to have them prepared for you at the fishmonger.
  3. Thinly slice one or two lemons, then cut each of the lemon slices into quarters.
  4. Now, prepare your skewers: thread three shrimps and two lemon pieces, alternately, on each of your wooden sticks. Repeat this operation until you finish the shrimps.
  5. Put all your skewers on a large platter.
  6. Very finely chop the garlic and fresh herbs you have chosen. Parsley, chives, and thyme are ideal for this recipe, but you can choose the ones you prefer.
  7. Prepare the dressing by mixing in a bowl the juice of two lemons, the oil, the grated skin of a lemon, the minced herbs, the minced garlic, ground black pepper, and a little salt. Mix well and pour over the skewers.
  8. Cover the tray with the skewers with plastic wrap and let them rest for about 20 minutes in the fridge.
  9. When the skewers have taken on flavor, heat a griddle or non-stick pan and cook the skewers for a few minutes per side. You can also cook them on a barbecue.

This recipe is compatible with the Fast Metabolism Diet’s Phase 3 (FMD); With these quantities, you get 2 protein servings for <20 pounds and 1 healthy fat serving for <20 pounds.

Like all habits, also eating healthy requires time and effort. One of my tricks to maintain a healthy diet in my day to day is always to have a fast and healthy option in my kitchen. My grilled chicken marinade recipe is perfect since you can put the chicken to marinate in the morning and at night, you have cook the chicken on a pan during a few minutes. It is an ideal recipe for any time, very easy to prepare and requires only a few ingredients.

Ingredients

  • 8 oz of chicken breast (skinless)
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 3 tablespoons of apple cider vinegar or another type
  • ¼ cup of water
  • Fresh chives (optional)
  • Salt and pepper

Instructions

  1. Cut the chicken breast into large strips.
  2. Mix all the ingredients except the chicken and create a marinade.
  3. Put the chicken inside the marinade and cover it well. Cover with transparent paper.
  4. Let it sit in the fridge for a couple of hours. Turn the chicken at least once.
  5. Heat a griddle or non-stick pan: cook the chicken strips for a few minutes on each side.
  6. Serve the hot chicken with chopped fresh chives (optional).

As promised at the beginning of the year, I continue with my small challenge of publishing a new recipe inspired by Japanese cuisine every month. After having posted my recipes for Ramen Low carb, Dorayaki with Anko, Okonomiyaki with shrimps and Pork with ginger, today I propose this recipe for noodles with vegetables and tamari sauce. It is an easy and quick recipe to prepare and 100% free of gluten and vegan. It is a very appropriate recipe for a quick and original lunch or dinner.

Noodles with veggies and Tamari sauce

Noodles with veggies and Tamari sauce Print This
Phase 1 Serves: 2 Prep Time: Cooking Time:

Ingredients

  • 2 cup of cooked brown rice noodles
  • 2 cups of zucchini
  • 1 cup of mushrooms
  • 1 cup of shitake
  • 1/2 onion cup
  • 1 clove garlic
  • 1 piece of fresh ginger
  • 1 bunch of fresh parsley
  • 4 tablespoons of tamari sauce
  • 1 cup of vegetable broth
  • 1 teaspoon ground ginger
  • Salt and pepper

Instructions

  1. Wash and cut the vegetables: chop the ginger, garlic, and onion, cut the zucchini into slices and mushrooms into quarters.
  2. In a wok or a large, put all the vegetables in the broth and sauté over medium heat for about 10 minutes.
  3. Meanwhile, cook the noodles in plenty of water, during the time recommended by the container.
  4. When the pasta is cooked, strain it and add it to the vegetables.
  5. Add the tamari sauce and adjust salt and pepper. Skip another minute.
  6. Serve with fresh parsley leaves and a little ginger powder.

Today we are going to talk a little about curry. As we all know curry is a very aromatic yellow spice used in many Asian preparations; but not only that. In India, a curry is any spiced stew with sauce. It can be vegetables, meat or fish. This dish, in all its variants, is usually accompanied by boiled rice or bread, for example, the Naan.

It is a delicious dish and usually a little spicy since it is made with the famous curry paste. There are different colors: yellow, red or green, depending on the ingredients used. For this recipe, I used the green curry paste, but pay attention that is quite spicy. I have also used oat milk that can be made with this recipe. The curry version that I propose today is very easy and quick to prepare. It is a Vegan Eggplant Curry that I am sure you will love.

Eggplant Vegan Curry

Phase 1 · Phase 3 Serves: 2 - 4 Prep Time: Cooking Time:

Ingredients

  • 4 cup of aubergines
  • 1 cup of cherry tomatoes
  • 1 onion
  • 2 cup of oat milk
  • 1 clove garlic
  • 1 teaspoon of green curry paste
  • 1 teaspoon curry powder
  • ½ teaspoon ground cumin
  • ½ teaspoon of cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon sweet paprika
  • 1 teaspoon of turmeric
  • Fresh parsley to serve
  • Salt

Instructions

  1. Wash the aubergines and dice them into medium size. Let them soak in cold water for a few minutes.

    2. Wash the tomatoes and cut them into quarters.
    3. Peel and chop the garlic and onion and sauté in a large nonstick skillet. Sauté over low heat for a few minutes.
    4. Add eggplant, tomatoes, all spices and a pinch of salt. Mix well and cook over medium-high heat for about 8-10 minutes.
    5. Add the green curry paste and stir for a minute until it softens and releases its aroma.
    6. Add the oatmeal milk, cover and boil gently for 10 minutes.
    7. Before serving put some fresh parsley and mix well.

This recipe is suitable for the Fast Metabolism Diet – FMD Phase1 and Phase3. With these quantities, you get 2 grains servings for <20 pounds in P1 or 4 grain servings for <20 pounds in P3. Integrate with the remaining foods.

Today I propose a perfect recipe to give a touch of flavor to vegetables, meat or even pasta. It is a very simple and fast red pepper sauce, raw and veganto prepare. The mixture of ingredients, makes this sauce an original and creative option to dress vegetables in the oven or accompany all kinds of meat.

This sauce is a good choice also for pasta dressing in Phase 2, both the shiritaki (pasta of konjak) and the pasta of edamame * (only for vegans).

Ingredients

  • 1 red pepper
  • 1/4 celery stalk
  • 1/2 onion (1 shallot in P2)
  • 1/2 lime juice
  • 1 clove garlic
  • 3 or 4 fresh mint leaves
  • 6 or 7 fresh parsley leaves
  • Grated lime zest
  • 1 or 2 water spoons
  • 1 pinch of salt

Instructions

  1. Wash and chop the pepper and celery
  2. Remove the germ to the garlic clove
  3. Peel and finely chop shallot and garlic
  4. Chop finely parsley and mint
  5. Combine all ingredients and beat until smooth.
  6. Serve this sauce with vegetables, meat, or pasta *

This recipe is compatible with the Fast Metabolism Diet – FMD Phase 1, Phase 2 and Phase 3; You can eat at any time of the day: it only contains vegetables.

Baba Ganoush is a typical Middle Eastern dish based on roasted eggplant, tomato, parsley, and cumin. It is often confused with another similar dish, the mutabal, which is a cream of eggplant and tahini, a kind of fusion between hummus and baba ganoush, but of this recipe.

The one I propose is a fresh recipe, light and quick to prepare, adapts to all tastes and perfect for parties and snacks with friends.

Baba ganoush

Ingredients

  • 1 large eggplant
  • 1 tomato (optional)
  • 3 tablespoons olive oil
  • Parsley
  • Mint
  • 1 clove garlic
  • 1/2 lemon juice
  • Cumin
  • Salt

Instructions

  1. Preheat oven to 200 °C (400° F)
  2. Place the aubergines washed on baking paper in a baking sheet and roast for about 45 – 50 minutes; Rotate them 2 or 3 times
  3. When well cooked, let them cool and then peel them
  4. Meanwhile, finely chop the garlic, parsley, and mint
  5. To put in a mixer the pulp of eggplant, the garlic, the parsley, the mint, the cumin, the oil, the juice of lemon and the salt; Beat until cream
  6. If desired, cut the tomato into cubes and use it to decorate the cream (optional)

How many times have we spent inviting friends to dinner but between one thing and another we have not had time to cook? And how many times we stayed to work late and the last thing we want is to have to prepare dinner? Well, today I propose a solution!

The recipe I present today is not only very tasty and simple to prepare, but also very fast: this makes it perfect for those occasions when we do not have the time or we are tired.

Chicken with lemon, parsley and shallot

Chicken with lemon, parsley and shallot Print This
Phase 2 Serves: 4 Prep Time: Cooking Time:

Ingredients

  • 680 gr of chicken breast
  • 2 lemons
  • Fresh parsley
  • 8 or 10 shallots
  • Black pepper
  • Salt

Instructions

  1. Preheat the oven to 190º C (370º F)
  2. Cut the chicken breasts horizontally, so that there are about 8 pieces of the same dimensions. Pieces should not be too thin
  3. Peel and cut the shallots in half
  4. Sprinkle with salt and pepper the chicken pieces and put in the middle of each a branch of parsley and half shallot
  5. Roll the chicken pieces over themselves and put them in a pot for oven with lid
  6. Put in the pot also the remaining shallots
  7. Cut a lemon into slices and put a slice on each piece of chicken
  8. Squeeze the other lemon over the meat and the shallots
  9. Bake for 30 minutes (in a pot with a lid)

Many times I’m at home and I don’t know very well what to prepare, I would like something tasty but at the same time I do not feel like cooking (sometimes it happens to me) in these cases or you end up eating out or you end up eating something that you do not feel like. What if there was a third option? A quick and tasty dish that is ready in 10 minutes? Let’s see what it is about.

Today I want to propose a simple but delicious recipe that will appeal to all lovers of Noodles and apart from being healthy and gluten-free, it is also very comfortable because the best thing is that it can be prepared in just 10 minutes.

Noodles with white sauce

Phase 1 Serves: 1 Prep Time: Cooking Time:

Ingredients

  • 1 and 1/2 cup cooked brown rice noodles
  • 113 gr of chicken breast
  • 1/4 cup white beans
  • 1/2 cup of zucchini
  • 1/2 cup of daikon
  • 1/4 cup of oat milk
  • Fresh parsley
  • White pepper
  • Salt

Instructions

  1. Cut chicken into small pieces and place in a nonstick skillet over high heat with oat milk and 4 tablespoons of water
  2. Cook the noodles in a large pot with plenty of water (time indicated on the package)
  3. Cut the zucchini and the daikon to julienne and join them and the beans to the chicken
  4. Cover the pan and if necessary add water
  5. Adjust salt and pepper and cook until the chicken and vegetables are cooked and a light white sauce is formed (about 10 minutes)
  6. Add cooked noodles and mix with the sauce
  7. Serve hot, with fresh parsley above

This recipe is compatible with the Fast Metabolism Diet – FMD Phase 1; With these quantities, you get a meal P1 for >20 pounds.

For a complete lunch add phase fruits and veggies.

For a complete Dinner add only phase veggies.
